Jasmine Green Tea Jelly with Watermelon
Refreshing, light, and subtly sweet, this jasmine green tea jelly with watermelon is a perfect summer dessert! Make it ahead and keep it in the fridge for when it’s too hot, and unlike gelatin-based desserts, this will stay jelly-like at room/warm temperatures so it’s perfect for picnics.
Ingredients
- Jasmine green tea: You can use any tea you’d like! Green teas pair well with watermelon. You can use tea bags or loose-leaf teas.
- Agar-agar powder: This is a gelling agent derived from a seaweed, so this dessert is vegan/vegetarian! You can find this online, in Asian supermarkets, or health food stores. I used a brand called Living Jin, which seems to set up firmer than they say on their label. If you find that your jelly isn’t fully set even after a while in the fridge, your agar-agar may have weaker gelling power, so use more next time. Using too much though, can result in a prominent agar-agar flavor.
- Sugar: Add sugar to taste!
- Watermelon: If watermelon isn’t in season, citrus would work well too. You can blend it up like a smoothie or use fruit chunks and juice.

2 cups water
4g (2 tsp) jasmine green tea leaves (2 tea bags)
1 1/4 tsp agar-agar powder
25g (2 tbsp) sugar (or to taste)
watermelon for serving
Directions
- Dissolve agar and sugar in cold water.
- Heat the water on the stove until it boils, holding it at a simmer for a minute.
- Turn off the heat and add the tea. Steep for 2 minutes (no more or else it turns bitter).
- Remove tea bags or strain out tea leaves while pouring the mixture into a mold/container.
- Let it cool until it is no longer steaming, then place it in the fridge to firm up.
- Enjoy! Scoop watermelon juice and pieces on top of the jelly and serve chilled.
