Best Air-Fryer Roasted Pumpkin Seeds (Pepitas)
Roast a batch of pumpkin seeds, or pepitas in the air fryer to use for a healthy and delicious snack or in recipes! Air-fryer pumpkin seeds roast quickly and evenly compared to oven-roasted ones.

Pumpkin Seeds/Pepitas
This recipe is intended for raw pumpkin seeds without their shell, which are green.
Add-Ins (optional)
- Salt (and pepper): Use about ½ tsp of salt (and ¼ tsp of ground black pepper) per cup of seeds, but adjust based on taste. Toss the seeds in about 1 tsp of oil per cup of seeds to stick on the salt and pepper. You may need to alter cooking time if you add oil before roasting: start with less time and add more as needed in small increments.
- Candied: Heat up sugar in a pan over low heat until it melts, stirring so no spots burn. Pour in the roasted nuts and stir to coat each one with sugar, then spread them on a sheet of parchment to cool. - Spiced: Add your favorite spice blends, using the salt & pepper method for savory flavors and the candied method for sweet flavors, adding the spices to the sugar along with the nuts.
Tips
- When roasting, add time in small increments. Pumpkin seeds can burn very quickly!
- If a recipe calls for chopped and roasted pumpkin seeds, chop the seeds after roasting so they cook evenly.
- Let the seeds cool completely before eating so they crisp up.

2 cups (240g) pumpkin seeds/pepitas
Directions
- Spread the pumpkin seeds in an even layer in the air fryer basket. It’s okay if a few fall through the air fryer basket to the bottom. Set the air fryer to 270 °F/130 °C for 10 minutes.
- After 10 minutes, the seeds should smell more fragrant, and some might make crackling noises. I prefer to roast mine until they turn slightly golden (instead of just green), so I add another 7 minutes.
- When the pumpkin seeds are done, remove them from the air fryer and let them cool completely. They will continue to cook slightly from the residual heat and become crunchy when cooled. You may also hear crackling noises as they cool; that’s completely normal!
