The Best Air-Fryer Roasted Cashews

Forget stirring a pan of cashews on the stove or babysitting a tray of them in the oven, hoping they don’t burn the moment you turn your back.

These air fryer roasted cashews are the easiest and quickest way to achieve a perfectly nutty and golden brown cashew. Roasting brings out their slight sweetness and delectable creamy texture, and freshly roasted cashews are unbelievably tasty on their own. Of course, they’re also delicious in sweet and savory dishes. Read on to find out how to roast the best cashews in your life!

Use fresh and raw whole cashews for the best results, and definitely don’t use rancid smelling, discolored, or otherwise off-putting cashews.

Add-Ins (optional)

Fresh roasted cashews are incredibly addictive plain, but here are a few flavoring options.

  • Salt (and pepper): Use about ½ tsp of salt (and ¼ tsp of ground black pepper) per cup of cashews, but adjust based on taste. Toss the cashews in about 1 tsp of oil per cup of cashews to stick on the salt and pepper. You may need to alter cooking time if you add oil before roasting: start with less time and add more as needed in small increments.
  • Candied: Heat up sugar in a pan over low heat until it melts, stirring so no spots burn. Pour in the roasted nuts and stir to coat each one with sugar, then spread them on a sheet of parchment to cool.   • Spiced: Add your favorite spice blends, using the salted cashew method for savory flavors and the candied method for sweet flavors, adding the spices to the sugar along with the nuts.

Tips

  • When roasting, add time in small increments. Cashews can burn very quickly!
  • If a recipe calls for chopped & roasted cashews, chop the cashews after roasting so they cook evenly.
  • Let the cashews cool completely before eating to let them crisp up.

Ingredients

  • 2 cups (275g) raw cashews

Directions

  • Spread the cashews in an even layer in the air fryer basket. Set the air fryer to 300 °F/150 °C for 7 minutes.
  • After 7 minutes, check to see if the cashews are roasted to your liking. If they are still too raw, return them to the air fryer, adding on 1-2 minutes as needed. I find that 7 minutes is perfect for golden-brown cashews.
  • When the cashews are done, immediately remove them from the air fryer and let them cool completely. They will continue to cook slightly from the residual heat and become crunchy when cooled.
  • Enjoy as a snack, or use it in recipes like my Sourdough Discard Granola!
